Its long past time for me to replace the Lithium CR 1/3N memory battery
in my old FT-757. I am considering just removing the old one and tacking
in a pair of wires which will run to a nearby Lithium AA cell in a holder.
Can anyone think of a reason why I wouldn't want to do this, assuming
there's a reasonable place to mount the holder?

Rule number 1. If it ain't broke, don't fix it.
Is the AA cell the same volts as the existing battery?
Does the risk of the modification outweigh the rewards?
What's gonna happen when you install the cell backwards?
Before you answer and tell us how smart/careful you are
....nobody ever said, "hey, I think I'll
put this in backwards..."
As I recall, there ain't much room in there.
Rule number 2...see rule number 1.
